This week, I wanted to make pesto myself as a giveaway, so I looked for something different and found this:
Pistachio Olive Pesto
150 g unsaltes pistachios
4 garlic cloves
150 g black olives without stones
120 g parmesan cheese
1 Tsp green pepper
120 ml olive oil
As much pasta as you like. We used spaghetti. Obviously.
Mix everything in a blender except for the olive oil.
Then slowly add the oil until everything has this nice pesto-ish texture. You can use it right away and the recipe says that this is a dish for four. However, we used less than half of it for the two of us, so it should be good for six. We also used it after my coffee date and I should have added a bit olive oil then. It should be ok for direct use though.
It tastes really good, especially with extra parmesan on top. All the ingredients are there without any of them being in the foreground. That is what I love about pasta. Looks like a blend, but all the tastes are there.
I put the rest into jars, added a piece of fabric on top and a pretty label to give away as a thank-you gift. Mothers in law tend to love self-made gifts.
